These are great with garlic mashed potatoes and fresh snow peas.... Yum!
7-8 thin-sliced pork chops (no bone)
2 tbsp butter
1 tbsp cooking oil
small jar apricot preserves (Grocery Outlet has some organic preserves right now that are delish)
1 cup white grape or apple juice
2 tsp garlic powder
1 tsp corn starch
salt and pepper to taste
Heat skillet over medium, add oil/butter together. Salt and pepper both sides of the pork chops and cook in skillet about 3 minutes per side. (Don't overcook!)
While chops are cooking, combine preserves, juice and garlic powder in separate bowl.
When done, remove chops to plate and drain all but 2 tbsp drippings from skillet. Pour fruit mixture into skillet and whisk in corn starch. Cook at medium heat for several minutes, whisking often until sauce is thickened. Taste sauce and add salt/pepper as needed. Add pork chops back into sauce and turn off heat, allowing the chops and sauce to sit for 3-4 minutes before serving. Sauce can be served on the side and/or directly with pork.
