Gluten-free "Monkey Bars"

Ingredients

    1/4 cup Sun Crystals (or 1/2 cup sugar)       
    3/4 cup soft butter       
    1 cup mashed bananas (2 or 3)       
    2 eggs       
    1 cup potato starch       
    1 tsp. cinnamon       
    1 tsp salt       
    1 tsp. baking powder       
    1/4 tsp. baking soda       
    2 cups uncooked oatmeal       
    1/2 cup raisins      
    1 cup chocolate chips

Directions

Preheat oven to 375 degrees.  Cream sugar blend with butter, add mashed bananas and eggs, beat until smooth. Stir in potato starch, cinnamon, salt, baking powder and baking soda into the sugar mixture. Fold in rolled oats, chocolate chips and raisins.

Spread batter in a greased 9 x 13  pan. Bake at 375 degrees for 25 to 30 minutes.
